Secret to the Best Falafel Recipe

Falafel is a deep-fried ball or patty made from ground chickpeas or fava beans, mixed with fresh herbs and spices. Here’s the secret to making the best falafel: using dill and parsley. These herbs are easily available in premium mega stores in Hyderabad and they significantly enhance the flavor of your falafel. If you can’t find dill or parsley, coriander is a good substitute.

Ingredients:

  • Soaked Kabuli Chana (chickpeas) – soaked for around 16 hours
  • Dill
  • Coriander (if dill is not available)
  • Parsley

Method:

  1. Chop the Herbs and Chickpeas: Add dill, coriander, and parsley to a chopper. Then add the soaked chickpeas.
  2. Grind Coarsely: Grind the mixture to a coarse semolina (rava) texture. This texture is key to a wonderful falafel. Avoid grinding it into a smooth batter.Tip: Use a chopper grinder to achieve the perfect coarse texture. Check the description box for the link to the chopper I use.
  3. Mix Well: Combine the mixture thoroughly to release all the flavors.
  4. Rest the Batter: Cover the batter and let it sit for about one hour to let the flavors meld.
  5. Frying: Fry the falafel on medium flame. This ensures that about 3/4 of the falafel gets crunchy while the remaining 1/4 stays soft, giving a perfect texture.

Falafel doesn’t have to be in a specific shape. In Middle Eastern countries, the shape varies by region. You can shape them into round balls or any shape you prefer. The taste will remain the same.
